Vintage 2020, 2021, 2022, 2023 & 2024
In general we would always recommend to open the current vintage at minimum 4h before drinking them to let them breath. This will improve your expiernce and help the wines to show their potential. For older vintages we would recommend to open the bottles in advance. Take a sip and decide if its ok or if you want to let them breath. If you like the wine as it shows in that moment, just put back the DIAM cork and keep the wine in the fridge.
Not fined or filtered
Our wines are "not fined or filtered." This means that the wine has not been treated with filters or other fining agents during production. This means that natural turbidity and sediment, may remain in the wine. Sediment is a natural residue that can settle in the bottle during extended storage. This is not a defect, but rather a quality feature, especially in unfiltered wines. Especially in some of the 2024s whites you will find some sediment. The sediment will fall to the bottom of the bottle. Just pour gentle and keep a tiny rest of the wine in the bottle if you don't like the sediment.
Nicht geschönt oder filtriert
Unsere Weine sind "nicht geschönt oder filtriert". Das bedeutet, dass der Wein während der Herstellung nicht durch Filter oder andere Schönungsmittel behandelt wurde. Dies führt dazu, dass natürliche Trubstoffe und Sedimente, wie zum Beispiel Depot, im Wein verbleiben können. Das Depot ist ein natürlicher Rückstand, der sich bei längerer Lagerung in der Flasche absetzen kann. Es handelt sich hierbei nicht um einen Mangel, sondern um ein Qualitätsmerkmal, insbesondere bei unfiltrierten Weinen. Dies kann gerade in ein paar Weissweinen des Jahrgangs 2024 vorhanden sein. Das Sidement wird am Boden der Flasche sich absetzen. Einfach vorsichtig ausschenken und einen kleinen Rest in der Flasche lassen, solltet ihr das Sediment nicht mögen.
